A few weeks ago, I received an email from Cabot asking me if I would like to try their “Light” cheeses as they are in the process of rolling out new packaging. I thought about it for a split second and then replied saying, in slightly different words, “Hell Yes!” I chose Light Sharp Cheddar (to be used in a future grilled cheese) as well as Jalapeno Light Cheddar (used in this grilled cheese) and the cheeses were eventually shipped. The cheese arrived over a week ago and on my first free day, I made a grilled cheese. For some reason, my inspiration came from fish tacos and I held on to that idea while I went to Whole Foods to purchase the rest of the ingredients. With this tortilla chips grilled cheese, I learned how a pan can make such a difference in something as simple as cooking a grilled cheese. Previously, I had been using a griddle that I believed to look great in photos and cooked pretty well. It is a pan that has been in the family forever so I thought, why change? I had no complaints. Well, I should have known there were actually plenty of reasons to upgrade pans.
Awhile back, my great aunt bought us some sort of something from Williams-Sonoma that we would not use. We originally exchanged it for a panini press but soon realized we wouldn’t really use it as often as hoped. (I am the only sandwich-aholic in the family.) That press was then exchanged for a pair of pans, one of which was a grill pan. This pan was used for this grilled cheese and hopefully the awesomeness can be seen in the photos. The pan browned/crusted the bread perfectly and allowed for a nice crunchy on the outside soft on the inside grilled cheese sandwich. This pan will be used for all future Sunday Dinners.
